To celebrate my daughter's first birthday we dreamed up a cute garden theme for her park party. For dessert, I made organic lemony cupcakes for friends and family but Gwenny got a raw vegan specialty. My mom used to make a traditional "dirt cake" with oreo cookies and cream cheese and it was soooo decadent and hard to stop eating! I tried my best to do a healthy version which served about 25 people who dared to try it! For the most part, Gwenny's daddy walked around with a large spoon and the whole bowl and ate almost half of it by himself! :)
The following recipe was adapted from Healthful Sense. I did not measure anything but it goes something like this. Please note: I made the chia pudding and dirt crumbles the night before it was to be served.
Chia Seed Pudding
6 cups homemade almond milk made with cinnamon and vanilla
2 cups chia seeds
mixed in wild frozen blueberries and agave to taste
Stir all of the above ingredients in a large bowl for a few minutes and let sit overnight (or for at least a few hours) in the refrigerator
Dirt Crumbles:
about a 1:3 ratio, hemp powder : almond butter
raw almond butter
chocolate hemp protein or amazing supergreens
agave
organic coconut flakes
mix well or use hands to crumble (this part can be messy, but you get to lick your fingers!)
When it is time to be served, add a layer of ripe bananas on top of the chilled chia pudding and then spread the crumbles across the top. You can also add pecans and more fresh blueberries, toss some edible flowers on it and dig in! :)
All this fun I had making her dirt cake and she decided she'd rather just enjoy her bluberries!! :)
